After I brought my paleo bread to work, and everybody ate it, somebody asked if I could make other breads like banana bread. Challenge accepted!
I do love banana bread, so I was more than happy to give this one a try. The only problem is that to make banana bread you need some super ripe bananas, and most grocery stores don’t sell brown skin bananas. Well, I guess that is a good thing, but I was impatient and had to wait days for the bananas to be ready to make this recipe. Worth it.
Banana Walnut Bread Recipe

Ingredients
- 2 cups almond flour
- 1 tsp baking soda
- 1 tsp baking powder
- 4 ripe bananas
- 3 tablespoons honey
- 1 tablespoon maple syrup
- 4 tsp cinnamon
- 4 eggs
- 1 tsp vanilla extract
- 1.5 cups walnuts
Directions
- Preheat oven to 350 degrees.
Combine all ingredients in a food processor and blend until smooth OR
- Mash the bananas with a fork.
- In a large bowl, mix all ingredients completely
- Pour the mixture into a loaf pan that has been greased with coconut oil
- Bake for 25-30 minutes
