Paleo / Keto Fried Rice (Cauliflower)

Serves: 3
  • 1 head of cauliflower (riced aka grated)
  • 2 tbs bacon fat, animal fat rendering, or olive oil (preferably bacon fat)
  • 1 cup pancetta or bacon (chopped)
  • ½ cup protein of your choice (optional - shrimp/langosta or leftover chicken/pork)
  • ½ small onoin (chopped)
  • 2 tbsp garlic (chopped)
  • 6 small carrots (chopped small)
  • 4 mushrooms (chopped)
  • ½ cup peas
  • 4 eggs (whisked)
  • 5 tbsl liquid aminos
  • ½ tsp toasted sesame oil
  • ½ tsp fish sauce
  1. Prep/chop the vegetables; whisk the eggs
  2. Toss the bacon or pancetta in a wok or large pan, cook on high for 2 minutes
  3. When the fat from the meat has started to coat the bottom of the pan, throw in your vegetables
  4. Cook for 5-7 minutes, continuously stirring
  5. When the mushrooms and carrots are cooked enough to your liking, remove the mixture and place on a plate to the side
  6. Add the eggs to the now empty pan; keep mixing the eggs to get a good scramble
  7. When the eggs are cooked, remove and place with the meat/vegetables
  8. Add the bacon fat/animal fat/olive oil to the pan and let it get hot
  9. Toss in your cauliflower rice, stirring for the first 30 seconds
  10. Stir occasionally, but let the rice sit on the bottom for a bit to get a crispy layer
  11. After 6 minutes add the eggs, meat and vegetables to the cauliflower rice
  12. Add the liquid aminos, fish sauce and sesame oil, mixing well.
  13. Cook and stir for about a minute and you're done!
